Za'atar Roasted Chickpea Fingers were born out of a desire for a healthy and flavorful snack that could be made with pantry staples. I had a can of chickpeas in my pantry and some za'atar that I had picked up at a local Middle Eastern grocery store. I decided to experiment with roasting the chickpeas with the za'atar and the results were amazing! The chickpeas were crispy on the outside and tender on the inside, with a wonderfully complex flavor from the za'atar. I've been making these Za'atar Roasted Chickpea Fingers ever since and they've become a favorite snack of mine and my family's.

Ingredients
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon za'atar seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, combine the chickpeas, olive oil, za'atar, salt, and pepper.
  3. Toss to coat evenly.
  4. Spread the chickpeas on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  6. Let cool for a few minutes before serving.
