Ingredients
  • 1 can (13.5 ounces) light coconut milk
  • 1/2 cup cornstarch
  • 1/4 cup sugar substitute
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 tablespoon chopped nuts (optional)
  • 1 tablespoon dried fruit (optional)
Instructions
  1. In a medium saucepan, whisk together the coconut milk, cornstarch, sugar substitute, vanilla extract, cinnamon, and salt.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Reduce heat to low and simmer for 5 minutes, or until the pudding has thickened.
  4. Remove from heat and stir in the chopped nuts and dried fruit, if desired.
  5. Divide the pudding among four ramekins or small bowls.
  6. Refrigerate for at least 4 hours, or overnight.
  7. Serve chilled.
