Orzo Salad with Roasted Sun-Dried Tomatoes and Feta is a dish that I've been making for years. It's one of my favorite summer side dishes because it's so light and refreshing. I love the combination of the sweet and tangy sun-dried tomatoes, the salty feta, and the fresh herbs. The dressing is also really simple to make and adds a nice brightness to the salad. I usually serve this salad with grilled chicken or fish, but it would also be great with tofu or tempeh.
