These fritters were inspired by a trip I took to India a few years ago. I was traveling with a friend who is a vegetarian, and we were looking for a quick and easy meal that we could make in our hotel room. We found a recipe for lentil fritters online, and we decided to give it a try. The fritters were so delicious that we ended up making them several times during our trip. When I got back home, I started experimenting with different ingredients and spices, and I eventually came up with this recipe for cumin-scented carrot and lentil fritters. I love these fritters because they're so flavorful and versatile. They can be served as an appetizer, a main course, or a side dish. They're also a great way to use up leftover lentils.
