Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 8 eggs
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook until softened.
  3. Stir in chickpeas and spinach.
  4. Spread half of the vegetable mixture into a greased 9x13 inch baking dish.
