I first developed this recipe when I was looking for a way to get my kids to eat more vegetables. They loved eggs, but they weren't always so keen on eating their veggies. So I started experimenting with different ways to add vegetables to eggs, and these muffins were born. My kids loved them, and I knew I had a winner. Over the years, I've tweaked the recipe a bit, but the basic ingredients and method have stayed the same. These muffins are now a staple in my kitchen, and I'm always happy to share the recipe with others.
