Ingredients
1 cup mixed vegetables (such as carrots, potatoes, green beans, and peas)
1/2 cup coconut milk
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
1/4 teaspoon salt
1 tablespoon chopped cilantro leaves
Instructions
In a large pot or Dutch oven, combine the vegetables, coconut milk, mustard seeds, cumin seeds, turmeric powder, red chili powder, and salt. Bring to a boil over medium-high heat.
Reduce heat to low, cover, and simmer for 15 minutes, or until the vegetables are tender.
