Ingredients
  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 cup canned corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
Instructions
  1. Rinse the lentils and pick over them to remove any stones or debris.
  2. Combine the lentils and vegetable broth in a medium saucepan.
  3. Bring to a boil over medium heat.
  4. Reduce heat to low and simmer for 20 minutes, or until the lentils are tender.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Add the onion and cook until softened.
  7. Add the green bell pepper and red bell pepper and cook until softened.
  8. Stir in the corn, black beans, chili powder, and cumin.
