Quinoa and Vegetable Biryani

Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup frozen peas
  • 1 cup chopped tomatoes
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. In a medium saucepan, combine the quinoa, vegetable broth, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  3. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the onion, carrot, and celery to the skillet and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  5. Add the peas and tomatoes to the skillet and cook for 5 minutes more.
  6. Stir in the cooked quinoa and season with salt, pepper, and your favorite Indian spices to taste.
  7. Cover and cook for 5 minutes more, or until the vegetables are heated through.
