The history of the vegetable and bean burrito is a long and winding one, dating back to the days of the ancient Aztecs. The Aztecs used to wrap their beans and vegetables in corn tortillas, and this dish eventually made its way to Mexico, where it became a popular street food. In the 1900s, the vegetable and bean burrito began to gain popularity in the United States, and today it is a staple of Mexican-American cuisine.
