Ingredients
2 lbs pork belly, skin removed
1 ripe mango, diced
2 jalapenos, seeded and diced
2 cloves garlic, minced
1 tbsp coconut aminos
1 tbsp apple cider vinegar
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper to taste
Instructions
Preheat oven to 325°F (165°C).
Score the pork belly skin in a criss-cross pattern and season with salt, pepper, cumin, and smoked paprika.
Place the seasoned pork belly in a roasting pan and roast in the oven for 2 hours.
