Growing up in India, I was always surrounded by the vibrant flavors of traditional Indian cuisine. One of my favorite dishes was a classic mango curry, made with ripe mangoes, aromatic spices, and creamy coconut milk. As I got older, I wanted to create a vegan version of this beloved dish that would be just as flavorful and satisfying as the original.
After many experiments in the kitchen, I finally perfected my vegan mango curry recipe. The key to this dish is using ripe mangoes.
When mangoes are ripe, they are naturally sweet and juicy, which gives the curry a rich and flavorful base. I also use a blend of spices that includes turmeric, cumin, and coriander, which adds warmth and depth to the dish.
To make the curry, I first sauté the spices in a little bit of oil until they are fragrant. Then, I add the mango and coconut milk and simmer until the mango is heated through. The result is a creamy and flavorful curry that is perfect for serving over rice or your favorite grain.
