Ingredients
  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
Instructions
  1. Rinse the lentils and pick over them to remove any stones or debris.
  2. In a large pot or Dutch oven, sauté the onion, carrots, and celery in a little bit of olive oil until softened.
  3. Add the garlic and cook for 1 minute more.
  4. Stir in the lentils, vegetable broth, cumin, and coriander.
  5. Bring to a boil, then reduce heat and simmer for 30-45 minutes, or until the lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot with a dollop of yogurt or sour cream.
