Spiced Potato and Bell Pepper Stir-Fry
This stir-fry is a quick and easy way to get your veggies in. The potatoes and bell peppers are tender and flavorful, and the spices add a nice kick. It's a great dish to serve with rice or noodles.
This stir-fry is inspired by the flavors of India. I first had a similar dish at a restaurant in New Delhi, and I've been trying to recreate it ever since. This recipe is my best attempt yet. It's not exactly the same as the dish I had in India, but it's close enough to satisfy my craving.
