Cilantro Lime Shredded Beef
Our Cilantro Lime Shredded Beef is a slow-cooker staple that's perfect for busy weeknights. The beef is fork-tender and the citrusy cilantro sauce is incredibly flavorful. This recipe was inspired by a trip to Mexico City, where I had the pleasure of eating some of the most delicious tacos I've ever had. The tacos were made with shredded beef that had been cooked in a tangy cilantro lime sauce. I was so impressed with the flavor of the beef that I knew I had to recreate it at home. After a few experiments, I came up with this recipe, which is now one of my favorites. I love the way the cilantro and lime brighten up the beef, and the slow cooking process makes the beef so tender that it just melts in your mouth.

Ingredients
  • 2 lbs beef chuck roast
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth
Instructions
  1. In a slow cooker, place the beef chuck roast at the bottom.
  2. In a small bowl, combine the cilantro, lime juice, garlic, cumin, paprika, salt, and pepper.
  3. Pour the mixture over the beef in the slow cooker.
  4. Add beef broth to the slow cooker.
  5. Cook on low for 6-8 hours until the beef is tender and easy to shred.
  6. Shred the beef using two forks and mix it well with the cooking juices.
  7. Serve hot and enjoy!
