Ingredients
1 cup graham cracker crumbs
¼ cup melted vegan butter
1 can (14 ounces) full-fat coconut cream
1 package (12 ounces) silken tofu, drained
¼ cup maple syrup
1 teaspoon vanilla extract
4 cups sliced peaches
1 tablespoon cornstarch
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Combine graham cracker crumbs and melted butter in a medium bowl. Press into the bottom of a 9-inch pie plate.
Bake for 10 minutes, then let cool completely.
In a blender, combine coconut cream, tofu, maple syrup, and vanilla extract. Blend until smooth.
Pour filling into the cooled crust. Top with sliced peaches.
In a small bowl, combine cornstarch and 1 tablespoon water. Stir until smooth. Pour over peaches.
Bake for 30 minutes, or until filling is set.
Let cool completely before serving.
