Molten Chocolate and Raspberry Lava Cake

Ingredients
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup almond flour
- 1/4 cup oat flour
- 1/4 cup light brown sugar
- 1/4 teaspoon baking powder
- Pinch of salt
- 1/4 cup unsweetened almond milk
- 1 tablespoon coconut oil, melted
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 6-ounce ramekins.
- In a medium bowl, whisk together the cocoa powder, almond flour, oat flour, brown sugar, baking powder, and salt.
- In a small bowl, whisk together the almond milk and coconut oil.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Divide the batter between the prepared ramekins.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached.
- Let cool for 5 minutes before serving.
