Ingredients
2 cups (250g) whole wheat flour
1/2 cup (100g) sugar substitute
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup (120ml) unsweetened almond milk
1/4 cup (60ml) lemon juice
1/4 cup (50g) fresh blueberries
1 tablespoon lemon zest
Instructions
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, sugar substitute, and salt.
In a separate bowl, whisk together the almond milk and lemon juice.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Fold in the blueberries and lemon zest.
Turn the dough out onto a lightly floured surface and knead gently a few times.
Pat the dough out into a 1-inch thick circle. Cut the dough into 8 wedges.
