Healthy Mediterranean Flatbread

Ingredients
  • 1 1/2 cups whole-wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup warm water
  • 1/4 cup olive oil
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped olives
  • 1/4 cup crumbled feta cheese
Instructions
  1. Preheat oven to 450 degrees F (230 degrees C).
  2. In a large bowl, combine the flour, salt, and baking powder.
  3. Add the warm water and olive oil and mix until a dough forms.
  4. Knead the dough on a lightly floured surface for 5 minutes.
  5. Divide the dough into two balls and roll each ball out into a 12-inch circle.
  6. Transfer the flatbreads to a baking sheet and bake for 10-12 minutes, or until golden brown.
  7. Top the flatbreads with the tomatoes, olives, and feta cheese and serve.
