Ingredients
  • Medjool dates

  • Coconut oil

Instructions
  1. Line a muffin tin with paper liners.
  2. In a food processor, combine the dates, peanut butter, cacao powder, coconut oil, maple syrup, vanilla extract, and salt. Process until smooth.
  3. Press the mixture into the prepared muffin tins.
  4. In a double boiler over simmering water, melt the dark chocolate. Dip the tops of the peanut butter cups into the melted chocolate and return to the muffin tins.
  5. Refrigerate for at least 2 hours before serving.
