I've been a fan of chocolate peanut butter cups for as long as I can remember. But I've never been a fan of the ones you buy at the store. They're always too sweet, and the peanut butter is often gritty. So I decided to create my own recipe for chocolate peanut butter cups that were both delicious and healthy.
Prep time: 15 | Cook time: 0 | Serves: 12
Ingredients
Medjool dates
Peanut butter
Cacao powder
Coconut oil
Maple syrup
Vanilla extract
Salt
Dark chocolate
Instructions
Line a muffin tin with paper liners.
In a food processor, combine the dates, peanut butter, cacao powder, coconut oil, maple syrup, vanilla extract, and salt. Process until smooth.
Press the mixture into the prepared muffin tins.
In a double boiler over simmering water, melt the dark chocolate. Dip the tops of the peanut butter cups into the melted chocolate and return to the muffin tins.
Refrigerate for at least 2 hours before serving.
Why It Works
The Medjool dates add a natural sweetness to the cups, so you don't need to add any refined sugar.
The peanut butter provides a rich, creamy texture that pairs perfectly with the dark chocolate.
The coconut oil helps to hold the cups together and gives them a smooth texture.
The maple syrup adds a touch of sweetness and helps to bind the ingredients together.
The vanilla extract adds a subtle flavor that enhances the other ingredients.
