Ingredients
1 medium sweet potato, peeled and cubed
1/2 cup vegetable broth
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped carrots
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Place sweet potato cubes in a small saucepan and cover with vegetable broth.
Bring to a boil over medium heat. Reduce heat and simmer until sweet potatoes are tender, about 10 minutes.
Drain sweet potatoes and mash with a fork.
Heat olive oil in a large skillet over medium heat.
Add onion, celery, and carrots to skillet and cook until softened, about 5 minutes.
Stir in mashed sweet potatoes, thyme, salt, and pepper.
Cook until heated through, about 5 minutes more.
Transfer mixture to an 8-inch square baking dish.
Bake in preheated oven for 20 minutes, or until golden brown.
