Chickpea and Sweet Potato Salad with Tahini Dressing

Ingredients
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 medium sweet potato, peeled and cubed
  • 1 cup cooked quinoa
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/4 cup chopped fresh parsley
  • Tahini dressing (see recipe below)
Instructions
  1. In a large bowl, combine the chickpeas, sweet potato, quinoa, red onion, celery, carrots, and parsley.
  2. Pour the tahini dressing over the salad and toss to coat.
  3. Serve immediately or refrigerate for later.
  4. To make the tahini dressing, whisk together the following ingredients in a small bowl:

  6. 2 tablespoons lemon juice
  7. 1 tablespoon olive oil
  8. 1 teaspoon ground cumin
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon black pepper
