Quinoa Breakfast Bowl with Berries and Nuts

Ingredients
  • 1 cup quinoa
  • 2 cups almond milk
  • 1/2 cup mixed berries
  • 1/4 cup chopped nuts
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseed meal
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
Instructions
  1. Rinse the quinoa in a fine mesh sieve.
  2. Combine the quinoa, almond milk, chia seeds, flaxseed meal, vanilla extract, and cinnamon in a medium saucepan.
  3. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  4. Remove from heat and let stand for 5 minutes before fluffing with a fork.
  5. Divide the quinoa among four bowls and top with the berries and nuts.
  6. Enjoy!
