Quinoa and Black Bean Salad with Lime-Cilantro Dressing
Here's a simple, refreshing salad that's perfect for those busy weeknight dinners. Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup chopped fresh cilantro
Instructions
  1. Rinse the quinoa under cold water for 1 minute.
  2. Combine the quinoa and water in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid is absorbed.
  4. While the quinoa is cooking, prepare the dressing by whisking together the lime juice, olive oil, honey, salt, and pepper in a small bowl.
  5. Fluff the quinoa with a fork and transfer it to a large bowl.
  6. Add the black beans, bell pepper, cucumber, red onion, and cilantro to the bowl with the quinoa.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately or chill for later.
