Quinoa and Avocado Burrito Bowl with Lemon

Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 ripe avocado, sliced
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, fresh or frozen
  • 1/4 cup red onion, chopped
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Combine the quinoa and vegetable broth in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes.
  4. Remove from heat and let stand for 5 minutes.
  5. Fluff the quinoa with a fork.
  6. Divide the quinoa among bowls.
  7. Top with the avocado, black beans, corn, red onion, cilantro, and lemon juice.
  8. Enjoy!
