Ingredients
  • 1 cup quinoa
  • 1 cup lentils
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomato
  • 1/2 cup chopped parsley
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
Instructions
  1. Rinse the quinoa and lentils.
  2. Cook the quinoa and lentils according to package directions.
  3. Let the quinoa and lentils cool.
  4. Combine the quinoa, lentils, red onion, cucumber, tomato, parsley, olive oil, and lemon juice in a bowl.
  5. Stir until well combined.
  6. Serve immediately or chill for later.
