Healthy Quinoa and Lentil Salad
This salad is a great source of protein and fiber. It's also easy to make and can be tailored to your own preferences.

Ingredients
- 1 cup quinoa
- 1 cup lentils
- 1/2 cup chopped red onion
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomato
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 2 tablespoons lemon juice
Instructions
- Rinse the quinoa and lentils.
- Cook the quinoa and lentils according to package directions.
- Let the quinoa and lentils cool.
- Combine the quinoa, lentils, red onion, cucumber, tomato, parsley, olive oil, and lemon juice in a bowl.
- Stir until well combined.
- Serve immediately or chill for later.
