Ingredients
  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 jalapeño pepper, minced (optional)
Instructions
  1. Rinse the quinoa in a fine mesh sieve.
  2. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through.
  3. While the quinoa is cooking, heat a large skillet over medium heat.
  4. Add the black beans, corn, bell peppers, onion, and jalapeño pepper (if using) to the skillet.
  5. Cook for 5-7 minutes, or until the vegetables are softened.
  6. Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetables.
  7. Stir to combine and cook for 2-3 minutes more, or until the quinoa is heated through.
  8. Serve the burrito bowls immediately, topped with your favorite toppings.
