Roasting cauliflower and broccoli brings out their natural sweetness and caramelizes them slightly. The addition of garlic and Parmesan cheese adds a savory and umami flavor that complements the vegetables perfectly. This dish is a simple but delicious side dish that can be served with any main course. I first came up with this recipe when I was looking for a way to use up some leftover cauliflower and broccoli. I tossed the vegetables with some olive oil, salt, and pepper, and roasted them in the oven until they were tender and slightly browned. The result was so delicious that I've been making this dish ever since. Over the years, I've experimented with different ingredients and techniques to find the perfect way to roast cauliflower and broccoli. I've tried adding different spices, herbs, and cheeses.
