I first came up with this recipe when I was looking for a healthy and easy way to use up some leftover quinoa. I had some kale and black beans in the fridge, so I threw them in the bowl as well. The result was so delicious that I've been making it ever since.

Ingredients
1 cup quinoa
2 cups vegetable broth
1 bunch kale, chopped
1 can (15 ounces) black beans, rinsed and drained
1/2 avocado, sliced
1/4 cup salsa
1 lime, juiced
Salt and pepper to taste
Instructions
Rinse the quinoa in a fine-mesh strainer.
In a medium saucepan, combine the quinoa and vegetable broth.
Bring to a boil, then reduce heat and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
Stir in the kale and black beans.
Cook for 5 minutes, or until the kale is wilted and the black beans are heated through.
Top with avocado, salsa, lime juice, salt, and pepper.
Serve immediately.
