Superfood Burrito Bowl with Kale and Quinoa
This superfood burrito bowl is packed with flavor and nutrients. It's made with quinoa, kale, black beans, avocado, salsa, and lime juice. It's a perfect meal for lunch or dinner.
I first came up with this recipe when I was looking for a healthy and easy way to use up some leftover quinoa. I had some kale and black beans in the fridge, so I threw them in the bowl as well. The result was so delicious that I've been making it ever since.

Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 bunch kale, chopped
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 avocado, sliced
  • 1/4 cup salsa
  • 1 lime, juiced
  • Salt and pepper to taste
Instructions
  1. Rinse the quinoa in a fine-mesh strainer.
  2. In a medium saucepan, combine the quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  4. Stir in the kale and black beans.
  5. Cook for 5 minutes, or until the kale is wilted and the black beans are heated through.
  6. Top with avocado, salsa, lime juice, salt, and pepper.
  7. Serve immediately.
