Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup water
  • 1 cup vegetable oil
  • 1 pound mixed vegetables, cut into bite-sized pieces
  • Spicy soy dipping sauce
Instructions
  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, whisk together the egg and water.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined.
  4. Heat the oil in a large saucepan or deep fryer to 375 degrees F.
  5. Dip the vegetables into the batter and then carefully drop them into the hot oil.
  6. Fry the vegetables for 2-3 minutes, or until golden brown and crispy.
  7. Drain the vegetables on paper towels.
  8. Serve the vegetables with the spicy soy dipping sauce.
