Crispy Vegetable Tempura with Spicy Soy Dipping Sauce
This tempura is a great way to use up leftover vegetables. The vegetables are coated in a light batter and fried until golden brown. The spicy soy dipping sauce is the perfect complement to the crispy vegetables.

Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup water
1 cup vegetable oil
1 pound mixed vegetables, cut into bite-sized pieces
Spicy soy dipping sauce
Instructions
In a large bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, whisk together the egg and water.
Add the wet ingredients to the dry ingredients and whisk until just combined.
Heat the oil in a large saucepan or deep fryer to 375 degrees F.
Dip the vegetables into the batter and then carefully drop them into the hot oil.
Fry the vegetables for 2-3 minutes, or until golden brown and crispy.
Drain the vegetables on paper towels.
Serve the vegetables with the spicy soy dipping sauce.
