Ingredients
  • 1 package (14 ounces) firm tofu, drained and pressed
  • 1 ripe avocado, peeled and sliced
  • 1/2 cup cucumber, thinly sliced

  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 sheet nori seaweed
Instructions
  1. In a small bowl, mash the tofu with a fork.
  2. Add the avocado, cucumber, red onion, soy sauce, rice vinegar, and sesame oil to the tofu and mix well.
  3. Spread the tofu mixture evenly over the nori seaweed.
  4. Starting at one end, roll up the nori seaweed tightly.
