The tacos smelled so good, and I asked them what was in them. They told me that they were vegan tacos, and they gave me a recipe. I tried the tacos, and they were amazing. I've been making them ever since.

Ingredients
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chilies, undrained
1/2 onion, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 (2.25 ounce) can chipotle peppers in adobo sauce, chopped
1 teaspoon chili powder
1/2 teaspoon ground cumin
Instructions
In a large skillet, combine the black beans, tomatoes, onion, green pepper, red pepper, chipotle peppers, chili powder, and cumin.
Bring to a boil over medium heat. Reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
Spoon the black bean filling into the tortillas and top with your favorite toppings.
