Sweet Potato Gulab Jamun
A twist on the classic Indian sweet, this Gulab Jamun uses sweet potatoes for a unique flavour and texture.

Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1/4 cup condensed coconut milk
- 1/4 cup almond flour
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- Ghee, for greasing
- 2 cups water
- 1 cup sugar
- 1/4 teaspoon saffron strands
Instructions
- Steam the sweet potatoes until tender. Mash them well.
- Add the coconut milk, almond flour, cardamom, and cinnamon to the mashed sweet potatoes and mix well.
- Shape the mixture into 1-inch balls.
- Heat the ghee in a skillet over medium heat.
- Fry the sweet potato balls until golden brown on all sides.
- In a separate saucepan, combine the water and sugar and bring to a boil.
- Add the saffron strands and simmer for 5 minutes.
- Add the fried sweet potato balls to the sugar syrup and simmer for 10 minutes.
