Sweet Potato Gulab Jamun
A twist on the classic Indian sweet, this Gulab Jamun uses sweet potatoes for a unique flavour and texture.

Ingredients
  • 2 medium sweet potatoes, peeled and cubed
  • 1/4 cup condensed coconut milk
  • 1/4 cup almond flour
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • Ghee, for greasing
  • 2 cups water
  • 1 cup sugar
  • 1/4 teaspoon saffron strands
Instructions
  1. Steam the sweet potatoes until tender. Mash them well.
  2. Add the coconut milk, almond flour, cardamom, and cinnamon to the mashed sweet potatoes and mix well.
  3. Shape the mixture into 1-inch balls.
  4. Heat the ghee in a skillet over medium heat.
  5. Fry the sweet potato balls until golden brown on all sides.
  6. In a separate saucepan, combine the water and sugar and bring to a boil.
  7. Add the saffron strands and simmer for 5 minutes.
  8. Add the fried sweet potato balls to the sugar syrup and simmer for 10 minutes.
