Quinoa and Roasted Sweet Potato Burrito Bowl
This quinoa and roasted sweet potato burrito bowl is a healthy and delicious way to start your day. The idea for this recipe came to me one day when I was trying to come up with a healthy and easy breakfast that I could make on the go. The result was a delicious and filling breakfast that I could easily eat with one hand.

Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 large sweet potato, peeled and cubed

  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread sweet potato cubes on a baking sheet and roast in preheated oven for 20-25 minutes, or until tender and browned.
  4. While sweet potatoes are roasting, cook quinoa according to package directions.
  5. Once quinoa is cooked, fluff with a fork.
  6. To assemble burrito bowls, divide quinoa evenly between bowls.
  7. Top quinoa with roasted sweet potatoes, your favorite toppings, and salsa.
