Ingredients

  • 1 cup dried brown lentils, rinsed and sorted
  • 4 cups vegetable broth
  • 1 cup frozen peas
  • 1/2 cup chopped fresh parsley
Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
  3. Add the garlic and cook for an additional minute.
  4. Stir in the lentils and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the lentils are tender.
