This refreshing Watermelon and Feta Burrito Bowl is the perfect summer meal! It's made with fresh watermelon, creamy feta cheese, hearty black beans, fluffy brown rice, crisp red onion, spicy jalapeño, and bright cilantro. The whole thing is drizzled with fresh lime juice and served with lime wedges on the side. It's a light and healthy meal that's perfect for a hot summer day.
I first came up with this recipe when I was looking for a way to use up some leftover watermelon. I had already tried making watermelon salad, but I wanted something a little more substantial. I started experimenting with different ingredients, and eventually I came up with this burrito bowl. It's quickly become one of my favorite summer meals. It's so refreshing and flavorful, and it's also really easy to make. I love that it's a healthy meal that I can feel good about eating.
