Kale and Quinoa Burrito Bowl with Lemon-Tahini Dressing

Ingredients
  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 bunch kale, chopped
  • 1/2 cup chopped red onion
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped avocado
  • 1/4 cup chopped cilantro
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the quinoa is tender and all of the liquid has been absorbed.
  3. While the quinoa is cooking, massage the kale with lemon juice. This will help to tenderize the kale and make it more flavorful.
  4. Once the quinoa is cooked, add it to a bowl and top with the massaged kale, red onion, bell pepper, avocado, and cilantro.
  5. For the lemon-tahini dressing, whisk together the lemon juice, tahini, olive oil, and salt and pepper to taste.
  6. Drizzle the lemon-tahini dressing over the burrito bowl and enjoy!
