Lentil and Avocado Burrito Bowl with Tahini
This lentil and avocado burrito bowl is a hearty and healthy meal that's perfect for lunch or dinner. The lentils are cooked in a flavorful vegetable broth and then combined with brown rice, avocado, cilantro, and a creamy tahini dressing. I first came up with this recipe when I was looking for a healthy and easy way to use up some leftover lentils. I had some brown rice on hand, and I thought it would be a good idea to combine the two in a bowl. I added some avocado for creaminess, some cilantro for freshness, and a tahini dressing for flavor. Ingredients
  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1/2 onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 cup brown rice
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • Tahini dressing (see recipe below)
Instructions
  1. Rinse the lentils and pick out any debris.
  2. Combine the lentils and vegetable broth in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 20 minutes, or until the lentils are tender.
  4. While the lentils are cooking, heat a little olive oil in a skillet over medium heat.
  5. Add the onion and bell pepper and cook until softened, about 5 minutes.
  6. Cook the brown rice according to package directions.
  7. To make the tahini dressing, whisk together 1/4 cup tahini, 2 tablespoons lemon juice, 1 tablespoon olive oil, 1/4 cup water, and a pinch of salt and pepper.
  8. To assemble the burrito bowls, divide the lentils, brown rice, onion and bell pepper mixture, avocado, and cilantro among four bowls.
  9. Drizzle with the tahini dressing and serve.
