Roasted Tomato and Basil Salsa
This salsa is a great way to use up leftover tomatoes. It's also a great way to add some flavor to your meals.

Ingredients
- 2 pounds Roma tomatoes, halved
- 1/2 cup chopped onion
- 1/4 cup chopped fresh basil
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Place the tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- Roast in the preheated oven for 30 minutes, or until the tomatoes are soft and slightly browned.
- Remove the tomatoes from the oven and let cool slightly.
- Chop the tomatoes, onion, and basil.
- Combine the chopped ingredients in a bowl.
- Serve immediately or store in the refrigerator for up to 3 days.
