Roasted Tomato and Basil Salsa
This salsa is a great way to use up leftover tomatoes. It's also a great way to add some flavor to your meals.

Ingredients
  • 2 pounds Roma tomatoes, halved
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh basil
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast in the preheated oven for 30 minutes, or until the tomatoes are soft and slightly browned.
  4. Remove the tomatoes from the oven and let cool slightly.
  5. Chop the tomatoes, onion, and basil.
  6. Combine the chopped ingredients in a bowl.
  7. Serve immediately or store in the refrigerator for up to 3 days.
