Ingredients
  • 1 pound breakfast sausage
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 12 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, cook sausage over medium heat until browned. Remove from heat and drain.
  3. In the same skillet, cook onion and bell pepper until softened.
  4. Stir in tomatoes, black beans, corn, sausage, eggs, milk, cheese, salt, and pepper.
