Ingredients
  • 1 cup old-fashioned oats
  • 1/2 cup mashed ripe banana
  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped mixed berries
  • 1/4 cup chopped nuts (optional)
  • 1/4 teaspoon baking soda
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the oats, banana, peanut butter, honey, vanilla extract, berries, nuts (if using), and baking soda.
  4. Stir until well combined.
  5. Drop by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
