Sweet Potato and Chickpea Burgers with Avocado Mayo

Ingredients
  • 1 1/2 cups cooked sweet potato

  • 1/4 cup bread crumbs

Instructions
  1. In a large bowl, combine the sweet potatoes, chickpeas, onion, bell pepper, garlic, egg, and bread crumbs. Season with salt and pepper.
  2. Form the mixture into 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Cook the patties for 4-5 minutes per side, or until golden brown and cooked through.
  4. Serve on buns or wraps with your favorite toppings.
