Ingredients
  • 1 medium eggplant
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cut the eggplant in half lengthwise and scoop out the seeds.
  3. Drizzle the eggplant with olive oil and season with salt.
  4. Roast the eggplant for 30 minutes, or until the skin is wrinkled and the flesh is tender.
  5. Remove the eggplant from the oven and let it cool slightly.
  6. Scoop the flesh out of the eggplant and place it in a food processor.
  7. Add the garlic, cumin, smoked paprika, salt, tahini, and lemon juice to the food processor.
  8. Process until smooth and creamy.
