Ingredients
  • 1 cup dried chickpeas

Instructions
  1. Rinse the chickpeas and soak them in water overnight.
  2. Drain the chickpeas and rinse them again.
  3. In a food processor, combine the chickpeas, onion, parsley, cilantro, cumin, coriander, salt, and pepper.
  4. Process until the mixture is finely chopped but not pureed.
  5. Form the mixture into 1-inch balls.
  6. Heat the olive oil in a large skillet over medium heat.
  7. Add the falafel balls to the skillet and cook until they are golden brown on all sides.
  8. Remove the falafel balls from the skillet and set them aside.
