These vegan sushi rolls are a delicious and healthy way to enjoy your favorite Japanese dish. They're made with a variety of fresh vegetables, avocado, mango, and a flavorful rice vinegar dressing.

Ingredients
1 cup sushi rice
1 1/2 cups water
1/4 cup rice vinegar
1/4 cup sugar
1/2 teaspoon salt
1 large avocado, peeled and sliced
1 ripe mango, peeled and sliced
1/2 cup cucumber, sliced
1/2 cup carrots, sliced
1/4 cup red bell pepper, sliced
Instructions
Rinse the sushi rice in a fine mesh strainer until the water runs clear.
Combine the rice, water, rice vinegar, sugar, and salt in a medium saucepan.
Bring to a boil, then reduce heat to low and simmer for 18 minutes, or until all of the water has been absorbed.
Let the rice cool for 15 minutes.
Spread the rice evenly over a sheet of nori seaweed.
Top with the avocado, mango, cucumber, carrots, and red bell pepper.
Roll up the nori tightly and slice into 1-inch pieces.
