Ingredients
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced

  • 1 tsp Cajun seasoning
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
Instructions
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add garlic, ginger, and Cajun seasoning, and sauté for 1-2 minutes until fragrant.
  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side.
  4. Pour in chicken broth and lemon juice, and cook for an additional 2 minutes.
  5. Season with salt and pepper, to taste.
  6. Remove from heat and sprinkle with fresh parsley before serving.
  7. Enjoy hot as a main dish or over zucchini noodles for a low-carb option.
