Ingredients
  • 1 head of garlic
  • 1/2 cup of olive oil
  • 1/4 cup of lemon juice

  • 1/2 teaspoon of black pepper
  • 1/4 cup of mayonnaise (can be substituted with Greek Yogurt for a dairy-free version)
Instructions
  1. Cut the top off the head of garlic and drizzle with olive oil.
  2. Wrap the head of garlic in aluminum foil and roast at 400 degrees Fahrenheit for 45 minutes, or until the cloves are soft and golden brown.
  3. Let the garlic cool slightly, then squeeze the roasted cloves out of their skins into a food processor.
  4. Add the olive oil, lemon juice, basil, thyme, salt, and pepper to the food processor and blend until smooth.
