These zucchini and chickpea fritters are a delicious and easy way to use up leftover vegetables. They're made with grated zucchini, mashed chickpeas, onion, cilantro, cumin, salt, pepper, and egg. The fritters are then pan-fried until golden brown and served with a harissa sauce. The harissa sauce is made with harissa, olive oil, lemon juice, and salt. It's a flavorful and spicy sauce that pairs perfectly with the fritters.
The inspiration for these fritters came to me one day when I was cleaning out my fridge. I had some leftover zucchini and chickpeas, and I wasn't sure what to do with them. I decided to experiment and see what I could come up with. I started by grating the zucchini and mashing the chickpeas. Then I added some onion, cilantro, cumin, salt, and pepper. Finally, I stirred in an egg to bind the ingredients together. I heated some oil in a large skillet and dropped spoonfuls of the batter into the skillet. I cooked the fritters for 2-3 minutes per side, or until they were golden brown. I served the fritters with a harissa sauce that I made by combining harissa, olive oil, lemon juice, and salt in a food processor. The fritters were a hit with my family and friends. They're a delicious and easy way to use up leftover vegetables.
