Spicy Black BeanTacos with Refreshing Pineapple Salsa
These spicy black bean tacos are a quick and easy meal that are perfect for a weeknight dinner. Ingredients
1 (15 ounce) can black beans, rinsed and drained
1/2 onion, chopped
1/2 red bell pepper, chopped
1/4 cup chopped fresh cilantro
1 teaspoon chili powder
1/2 teaspoon groundcumin
1/4 teaspoon salt
1/4 cup prepared or homemade pineapple salsa
Instructions
Combine the black beans, onion, red bell pepper, cilantro, chili powder, groundcumin, and salt in a medium bowl
Stir to combine and set aside
Using a fork, mash some of the beans against the side of the bowl to create a creamy consistency
Warm the tortillas in a microwave, oven or on a griddle
Place some of the black bean mixture in the center of a tortilla
Top with your favorite toppings, such as shredded lettuce, diced tomatoes, sour cream, or cheese
Serve immediately
