Ingredients
  • 1 cup quinoa
  • 1 cup chopped broccoli
  • 1 cup chopped carrots

  • 1/4 cup chopped zucchini
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped cucumbers
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Spread vegetables on a baking sheet and roast for 20-25 minutes, or until tender.
  4. Cook quinoa according to package directions.
  5. Combine quinoa and roasted vegetables in a large bowl.
  6. Whisk together olive oil, lemon juice, lime juice, orange juice, honey, salt, and pepper.
  7. Pour vinaigrette over salad and toss to coat.
  8. Serve immediately or chill for later.
